Cooking them frozen will cause the heat to spread unevenly and your hash browns might cook from the outside, while the inside remains frozen. Cooking them frozen might also result in them becoming too mushy and/or watery.
Why is my hash brown casserole soggy?Drain thawed frozen hash browns of any excess moisture otherwise it can make your casserole soggy. Don't use just shredded potatoes. You can make your own hash browns but you must soak the shredded potatoes and dry them very well (see instructions in post). Still, frozen hash browns are optimal because they are drier.
Can hash brown casserole be made ahead and frozen?You can absolutely make hash brown casserole ahead of time and freeze it. In fact, that's the way I make mine most of the time. You can freeze it before you bake it or after. I find it is best when you make it without baking, freeze it, and then cook it fresh on the day you want to serve it.
Do you have to refrigerate breakfast casserole before cooking?You can either bake breakfast casserole immediately or cover the dish with plastic wrap or foil and refrigerate for up to 24 hours to bake later.
