Best type of pork chops for the Instant Pot

First, let’s talk a bit about where pork chops come from on the pig. Pork chops actually come from the loin of the pig that runs from the hip to the shoulder. The loin is then cut into slices called pork chops. It can sometimes have rib bones and is where we get bone-in pork chops.

The best kind of pork chops to cook in your Instant Pot would be thick cut chops – either boneless or bone-in. You can cook thin pork chops in your Instant Pot, but they sometimes come out tough due to being overcooked. Keep reading for my tip on how to make juicy thin pork chops in your pressure cooker.

How Do I Cook Pork Chops in the Instant Pot?

Typically, it is best to use a recipe so you know how best to season your pork chops. However, if you want to season them the way you want, you just need to know how to cook them and how much liquid to add.

  • Sauté your chops: First, you will want to put a little oil or butter in your inner pot. Then, sear your chops on both sides using the sauté function ( 1-2 minutes on each side).
  • Add your Liquid: You will use at least a cup of liquid. I always add 2 cups to everything I cook. And, I always use beef broth as it gives the chops more flavor and makes them juicier. However, you can use water or broth.
  • Pressure cook: Secure your lid. Put your vent in the “sealing” position. Then, set your pressure cooker on manual for 10-minutes.
  • Natural Release: Once your pot beeps that it is done, you will want to let it sit for at least 10-minutes. I like to leave mine for 15 just to make sure they are super tender. Once you have waited 10 to 15 minutes, you can push your vent to the “venting” position to release the rest of the pressure.

That’s it! Super easy! My basic Instant Pot pork chop recipe can be found HERE. I got into more detail and share step-by-step photos.

How Do I Cook Thin Pork Chops?

The thinner your chops, the tougher they are going to be. You want your Instant Pot pork chops to be about 1 inch thick. However, just because you have thin chops doesn’t mean you can’t make them tender and juicy in your Instant Pot.

If your chops are thinner, follow the above steps on how to cook pork chops, but change the pressure cook time from 10 minutes to 7 or 8 minutes. Allow a 15-minute natural release. This will make sure your thin chops come out just as tender and juicy.

Additionally, I would recommend using Instant Pot Pork Chops Recipes with a gravy sauce to make them even juicier such as my Instant Pot Pork Chops and Gravy Recipe.

Should I Use a Trivet to Cook Pork Chops?

Using a trivet is completely up to you. I personally have found that my pork chops come out juicier when I do not use a trivet. Instead, I simply place my chops right in the liquidy juices in the inner pot. Many people do this with tougher meats as well.

Stacking Your Pork Chops

Whether you use a trivet or not, you will most likely have to stack your pork chops. This is because we don’t make 1 or 2 chops at a time. The great thing about the Instant Pot is that you can do this because the liquid creates steam that will cook each chop evenly no matter how they are places in the pot.

Can I Cook Frozen Pork Chops in the Instant Pot?

Absolutely! The best thing about using an Instant Pot is the ability to plop any kind of meat into it frozen and it come out tender and juicy in half the time.

You will follow the above directions for cooking your chops. But, instead of 10 minutes manual time, you will cook your chops for 13-minutes. Additionally, you will want to do at least 15-minutes of a natural release.

Why are my pork chops tough in instant pot?

Why are my Instant Pot pork chops tough? It's very important not to overcook your meat, as it can become tough. Watch the clock carefully so you release the pressure at exactly 10 minutes after the cook time. If you use thin cut chops, you also run the risk of overcooking the meat and rendering it to be tough.

How long do you cook pork in an instant pot?

Using a HIGH setting, 40 minutes is how long you cook pork in the Instant Pot (using pork loin). If you're using pork shoulder/butt, you'll cook on HIGH for 1 hour. Let the pressure release naturally for 15 minutes. Transfer the pork and onions to a bowl.

How do you get the perfect crust on pork chops?

Let your chops sit on the counter for about 30 minutes before you begin to cook them. If the meat is too cold, the outside will overcook while the inside comes to the right temperature. Giving the pork a little time to warm up will ensure a nice crust on the outside, with a tender center.
